So I’m a total crockpot whore. If it can be made in the crockpot, I’m about that life. I also like to freeze my crockpot meals, that way I can thaw them later and….put them back in the crockpot! These are a few of my wins.
LOPE SLOP– Courtesy of my cousin Jackie. This is so delish! Total comfort food!
3 boneless skinless chicken breast
1 can cream of chicken soup
1 pint whole fresh mushrooms
1 package of dry Italian seasoning (the salad dressing kind)
1 block of cream cheese cubed
Season to taste
Cook in crock for 8 hours on low, shred the chicken (it falls apart easily)
Serve over brown rice or egg noodles. (I pick egg noodles every time)
P.S. All of Jackie’s recipes are fat free and calorie free so let’s do another one of hers.
Potato Soup–
1 bag of diced cubed frozen potatoes
1 32oz chicken broth
1 can cream of chicken soup
Cook on low for 7 hours then add 1 block of cream cheese and cook 1 hour
Mix and serve. Add shredded cheese, sour cream bacon, whatever you like.
Chili– However you make it, freeze it. There is nothing better than chili on a cold day, or a hot day, because chili is AWESOME!
1 lb. ground beef
3 cans kidney beans (you can use any beans you like)
3 cans Hunts tomato sauce
1 can Italian tomato sauce
S&P, chili powder, chili flakes, cayenne pepper, I also use a little onion powder, and a little garlic. Chili is a really personal thing, so make it how your family likes it.
Brown your beef and throw everything in the crock for 8 hours’ on low.
